Vitamin E is stable on heating at temperatures from 150 to 175°C. It is less stable in acidic and alkaline environment. α-Tocopherol is in the form of oil. It can be decomposed in some food processing. At temperatures below 0°C it loses activity. Its activity has adversely affected iron, chlorine, and mineral oil.
